FISH IS SO EASY TO COOK.

 

For a quick supper just coat a fillet or two of white fish with beaten egg.  Roll the fillet in breadcrumbs.   Heat up a non-stick frying pan with a little oil and shallow fry the fish until golden. It only takes a few minutes!

Another tasty recipe (from my friend in New Zealand) is to mix together some chopped parsley, a little paprika, breadcrumbs and grated cheese.

Place fish fillets in a oven proof dish, sprinkle the breadcrumb mixture over the fillets and bake in the oven for around 15 minutes.

You can also flake some SMOKED MACKEREL fillets into some cooked pasta.  Add some tinned or fresh tomatoes a little bit of chilli and some herbs.  Cover with grated cheese and bake for about 20 minut

I love all things Italian, so this next one is a favourite!

SPAGHETTI WITH CRAB.

300 grams spaghetti, 2 tbsp olive oil, 1 chilli finely chopped, zest and juice of a lemon, 200 grams of mixed crab meat, 50 grams of Parmigiano grated cheese.

 

Cook the spaghetti to your taste.  Drain and keep warm.  Heat the oil in a pan, fry the chilli and lemon zest, add the crab meat, lemon juice and warm through.  Stir into the spaghetti, add the Parmigiano and serve!
