We care passionately about the quality and freshness of our fish but we also care about the sustainability of the fishing grounds from where our fish are sourced.

Sustainability is a complex issue. We believe one of the best ways to avoid overfishing is to move towards eating the lesser known species and to only eat fish when it is in season.
Lesser known species include gurnard, megrim sole, sand sole, witch sole, conger eel, whiting – because of their relative lack of popularity they are excellent value for money and make great eating.There are over 60 different species of fish to choose from in the UK coastal waters but only around 10 of these regularly feature on restaurant menus and supermarket counters.
